BALDINI

From organic grains to organic fragrances

It was as early as the 70s that TAOASIS founder Axel Meyer first supported organic food stores in Germany and supplied them with his delicious organic whole-grain breads. Experience in producing and mixing mueslis was gained in the first European organic store, Peace Food Berlin, in the early 70s.
In 1979, the now-legendary organic bakery book in which Axel Meyer wrote down his findings was published. “The Art of Baking” was not only the very first German bakery book with whole-grain recipes, but, with more than 300000 copies sold, it is also the most successful one, becoming the classic books for whole-grain aficionados during the 80s.
After publishing other groundbreaking books on nutrition and through the contact with natural flavours and spices such as cinnamon, ginger, fennel and coriander, the love for fragrances gradually started to take centre stage. It was strengthened on several journeys. Axel Meyer saw that fragrances do not just mirror a culture’s ways of thinking and living, but essentially influence them. In south-Indian Auroville he learned about the labour-intensive cultivation of herbs and flowers, and also how to produce plant essences by means of water vapour distillation and cold press. This is how the “Lexicon of Fragrances”, a standard work on aroma therapy, was developed in 1991. At the same time, TAOASIS Natural Fragrance Manufacture was born, whose latest addition is Baldini.
